Josh Emett's Healthy Nut Bar

Ingredients:

1/2 cup Almonds, Pistachio, Walnuts, Cashew Nuts, Pumpkin Seeds

1/4 Cup sesame seeds

1/4 dates, cranberries, honey, nut butter (e.g. Fig & Fox everything Butter)

1 tsp vanilla

1 cup coconut oil

200g Dark Chocolate

Method:

Blitz nuts & seeds until chopped into small pieces but so they still have texture.

Mix in rest of the ingredients and blitz again until mixed.  It should form a ball when squeezed together. 

Press into a rectangle pan & freeze until hard (e.g. overnight)

Melt 200g dark chocolate and pour over frozen mixture and freeze.

Once frozen, turn onto a chopping board and slide into small squares.

Keep in freezer.
