Brown Rice Salad
INGREDIENTS:
• 2 cups (medium grain) brown rice
• 1 cup toasted sunflower seeds
• 1 cup roasted cashew nuts
• 1 1⁄2 cups currants (I use 1⁄2 currants & 1⁄2 cranberries for colour)
• 6 spring onions – chopped
• 2 Capsicums (1 red, 1 yellow or orange) –chopped Dressing
• 6 Tbsp soya sauce
• 6 Tbsp olive oil
• Juice of 1 lemon
• 2 cloves garlic – crushed
• Pepper to taste
DIRECTIONS
1. Boil Rice as per packet instructions
2. While rice is boiling prepare other ingredients and combine in a large bowl
3. Once rice is cooked, drain and toss with other ingredients and dressing, while hot
4. Let it cool then refrigerate until serving
