Vietnamese Dressing

Chop 1 fresh de seeded red chilli finely sliced 
1/4 cup white sugar 
1/4 cup white vinegar
1/4 cup fish sauce
3/4 cup water
Finely zested rind of a lime

Put all into jar, shake and use 

On salmon:
Couple of tablespoons on salmon
240 degrees preheated oven, once salmon goes in turn to fan grill for 8-10mins.
