Quickie Microwave Brownie

1 cup sugar
2 eggs
1 tsp vanilla essence
1 cup self-raising flour (can use Gluten-free flour/ rice flour - I don't usually use self-raising)
¼ cup cocoa
1 cup chocolate chips
Method:
Beat sugar, eggs and vanilla essence together briefly with a fork.

Beat sugar, eggs and vanilla essence together briefly with a fork.
Add sifted flour, cocoa, melted butter and chocolate chips.
Mix until just combined.
Pour into a well buttered or baking paper lined microwave safe dish.
Nuke on high for 3 - 4 minutes (the shorter the gooier the brownie will be - when you take it out, touch the top - if no mixture is on your finger and the brownie is spongy - its ready!)
Allow to cool, dust with icing sugar and cut into squares.
Don’t forget the icing sugar dusting, it really does make it much better.
Also good hot with ice cream.
Variation: Spoon 2 tablespoons of the mixture into ramekins for individual hot chocolate puddings...
