Tomato Pasta Sauce


Ray McVinnies Tomato Pasta Sauce

Ingredients
2 Onions
4 cloves of garlic
100 mLs Extra Virgin Olive Oil (quite a bit)
2 cans of Crushed Italian Tomatoes
140g Tomato Paste

Chop 2 onions
Dice garlic
Put olive oil in pan
Low cook onions & garlic with a bit of salt & pepper (no crunch in onion) for about 15mins
Add tomatoes
Bring back to boil
Add plenty of paste
Simmer for about 20mins - slow cook to let the flavour develop fully
Should be quite thick and jam-like
Taste…add salt if needed

Don't worry about oil residue on the top

Pasta:

Add LOTS of salt - about a handful
Water needs to taste like salt water from the sea
Don't put olive oil in water
To stop pasta sticking together, use a BIG pot to cook and continuously stir till boiling again
If pasta needs to sit after cooked…toss olive oil onto drained pasta

Serve with parmasen and fresh basil!
